SMOKED SALMON FRITTATA

4 tablespoons olive oil

1/4 medium onion, chopped

salt and pepper to taste

4 ounces pepper smoked salmon

8 black olives, chopped

6 eggs

2 tablespoons milk

2 tablespoons heavy cream

1/2 (8 ounce) package cream cheese, cubed

DIRECTIONS

Preheat the oven to 350.

Heat olive oil in an 8 inch oven-safe skillet over medium heat. Add onion, and season with a little salt and pepper. Cook, stirring until translucent. Add the salmon and olives; cook and stir briefly to release the flavors.

In a medium bowl, whisk together the eggs, milk and cream. Pour over the salmon and onion, and stir gently. Scatter cubes of cream cheese over the top. Cook over medium heat without stirring, until the edges appear firm.

Place the skillet in the preheated oven, and bake for 20 minutes, or until nicely browned and puffed. Flip onto a serving plate, and cut into wedges to serve.Help! My husband bought the wrong salmon and I need to know how to cook it?
Agreed, you don't cook smoked salmon!!! Here are some ideas you might consider for serving it:

1. Make a white sauce with cream cheese, capers, lemon juice and chopped chives. Add smoked salmon to the mix and toss with cooked linguini and parmesan or asiago cheese.

2. Mix salmon with cream cheese, capers, chopped artichoke hearts and serve on top of toasted sliced baguette. Top with thin slices of mozarella and broil until golden.

3. Mix with cream of mushroom or cream of potato soup, 1 can cream corn, 1 1/2 cups half and half, 1/4 cup sour cream, and several chopped green onions. Heat and serve with warm french bread and sweet butter.

4. Twice baked potatos: scoop out insides of baked potatos and mash with butter, cream, cheese, and smoked salmon. Spoon back inside the shells, sprinkle with cheese and bake until cheese melts.
It's only cooked if it was hot smoked, but it could also have been cold smoked. Either way, you really shouldn't cook it. The structure has changed at this point and I don't think it would be beneficial to cook it.

You can dice it up really fine and add capers and lemon juice.
I could cure your problem if I was there very easily.

Smoked Salmon just happens to be my favorite. : )

Maybe the store will allow him to change it for the other if it is still wrapped.
You don't cook smoked salmon as it is already cooked. All you need to do is slice and eat it.
Yes it can be Eaten (not ate) cold and is very tasty.

But add it to a creamy pasta sauce. Or toss with hot noodles, sun dried tomatoes, and so on....
